I guess I have been a little absent from the blogging world lately and I don't like it.
I have taken lots of pictures lately and have lots of happy little things to blog about, but the thing that I lack right now is hours in a day. I am overwhelmed at home, overwhelmed at work, and going a little bit crazy.
But I did feel the NEED to post so I remembered how incredible the asparagus was that I fixed and devoured on Sunday night.
I think I have probably bought asparagus .... oh ... maybe, once. Ever. (If I did buy it twice, I never fixed the second bundle and ended up throwing it out. Partly because I do that, and partly because I don't really know how to fix it and have it taste really, super yummy.) But on Sunday afternoon, I stopped by my friend Vicki's house and she had a bundle. She and her husband were heading out of town so she asked if I wanted it. I said sure.
Then Vicki proceeded to show me how she makes it - because when she makes it, it is really, REALLY good. She showed me how she breaks the stems where they want to be broken. (She said, "Just bend the ends back and they will break off right where they should.") Then she said she puts butter in a frying pan, adds a little lemon juice, sprinkles on a little bit of seasoning salt and cooks them for about 4 minutes.
So that's what I did as soon as I got home. See that bundle up above? That's about how much asparagus I ate all by myself - prepared exactly the way Vicki instructed and may I just say, I think that is going to be one of my new favorite things to eat ...

ReplyDeleteI loved your comment today...I love the "when we added the fifth..." I NEVER thought I would have FOUR but five even sounds nice too! You make it look easy :) for now though, & maybe forever, I have to get this four thing down, it really is just number two who keeps me hopping :)
I do mine this way too and I too can eat that much...or more! You have a great Easter weekend and don't push yourself so hard! :D

ReplyDeleteIt's my favorite vegetable. Love it! I sautee them in olive oil for a couple of minutes. Then add red pepper flakes, salt and black pepper for taste. Then off the skillet, squeeze some lemon, and then shave some parmesean cheese on top. Yum!

ReplyDeleteoh my goodness i LOVE asparagus! I make it like at least once a week. It's delicious. I just put it on a pan, spray it with a little PAM, sprinkle with lemon juice and a handful of parmesan cheese...let it roast for 15-20 minutes and you're set. Oh man, I might have to make some with lunch today now.

ReplyDeleteSteamming is good with holandaise sauce. Cut off tough ends place on steamer for about 8 minutes until tender and bright green. The best way is to wrap individual (thick) spears in bacon then skewer about 7 together on bamboo skewers (don't forget to soak skewers if using bamboo or wooden) then grill on barbeque over low to medium heat until bacon is cooked. Becareful as bacon grease flares up quickly.

if you mix just a bit of mayonaise and soy sauce it's delicious on asparagus.
